Grown by Filipe Arcila at Jardines del Eden, this coffee was exposed to 'dry anaerobic' fermentation of 24 hrs, after which it was dried on raised beds until a moisture content of 18%. From there the coffee was placed inside GrainPro bags for a further fermentation of 50 hrs, then once again dried on raised beds until a moisture content of 10.5% was achieved.
The coffee is then finally aged inside of emptied/former rum casks for 20 days.
This microlot ws harvested from 100% Castillo Arabica. The variety was developed by the Federacion Nacional de Cafeteros to be more productive than Caturra (commonly planted in Colombia) and resistant to coffee leaf rust.
For 80 years Cofinet - a family business - has grown and distributed the finest Colombian coffee to local exporters. In 2015 they expanded their operations and began producing, sourcing and exporting speciality coffee to the rest of the world.
As growers, they specialise in alternative fermentation processes that are new to Colombia. On their farm and in their processing centre - La Pradera - the most exotic varieties are processed achieving unique profiles that are unknown for Colombian coffees.
